Soldier mode is probably the easiest, but if you like playing caster then go Adept. That goes for the first game too, actually - Soldier is the easiest, Adept is a lot of fun.
Normal is a good difficulty level in both games. Higher difficulty levels in the second game get more fun, whereas in the first game they're just tedious.
