This seems like a game that could play with a joystick. I mean does this seem any more deep or technical than Fight Night?

Almost all motion control based games can be played with a joystiq or keyboard or DS3 or w/e easily. You will most probably be able to do a lot more as well, with little to no problems. But will it be the same experience as using motion control for the game? depends. In a game like this where you have to physically involve yourself more to play it, motion control just makes it a whole different experience altogether. Might not be everyones cup of tea so those who don't like it can always stick to a game that doesn't involve motion control.
So long story short, the answer to your problem, no I doubt this is any more technical than FN. It doesn't try to be either. It's a motion control game built for that sole purpose, nothing more nothing less.
ps: I HOPE the next FN use motion control as an option, I personally would love it.

That's a pretty deep way of saying, "yeah, but its the same with most motion control games." I believe EA already said the next FN won't use motion controls.
I have a feeling EA will make a boxing game exclusively for the Kinect. The Move is really limited to your hands. For example, in The Fight you perform dodging and headbutts with hand gestures. The Kinect can follow your whole body which would be perfect for dodging and moving around. But we'll have to wait and see.

Sorry but I found this pretty funny.
Boxing only involves your hands, so no need to make an EA boxing game for Kinect only.
Now if you want to talk about Kick Boxing or an MMA game that is a different story.

I think his argument would pretty much boil down to Move games can all be just done on a regular controller, and therefore don't add much to the gameplay and are pointless. While on the other hand, KINECT GAMES WILL BLOW YOUR MIND!! Of course, that's just a guess.
@ OP
I'm definitely going to be getting Move day one, so Sports Champion and The Fight will probably be the first games I get. Maybe Eyepet for the kids. Can't wait for the Move patch for Heavy Rain, as well.
