Wii Fit can't be copied. Neither the Move nor Kinect can measure your weigth or your balance. 
However I have no doubt, that all the third party products (Fitness/Party games) will appear sooner or later on Move or Kinect. We already have some in the launch lineup:
- Your Shape: Fitness Evolved
- EA Sports Active 2
- Deca Sports Freedom
- Game Party: In Motion
