The Burnout demo used the feet. Forward accellerates, backward brakes. One could also use your hand distance from your body to determine accelleration. Push foward to accellerate, pull back to brake. This is how JoyRide handles boost. Pull back and then push forward.
I personally don't think driving games will be very fun with Kinect regardless.
