It's important to remember here that all we've seen of Zelda is a ten minute demo designed to show off the controls. We've seen nothing of how those controls will be used in the context of plot or game mechanics. We don't even know a basic premise of the story. Hell, the segment demoed might not even be in the final game for all we know. So to say 'it's just the same thing we've seen time and time again' is a little disingenuous.
Sure, it's Link with a sword, shield, bow and arrow, etc, but that doesn't mean it's going to end up being the same. I'm not really sure what could be done differently there unless Link is suddenly going to go Guybrush Threepwood style and use a rubber chicken as his main weapon...
Sorcery looked ok, but like Zelda, we still only have a basic idea of what it is, and has as been mentioned, it seems a lot like Harry Potter, even that big thing at the end of the demo looked a bit like the troll in the first book/film.

what do you mean we dont?! its zelda. the entire world is imperiled and link must travel across the world to different environments that each contain dungeons reflecting the area and collect some item from a boss eventually leading to him saving the world from a great evil and probably rescue a princess along the way

There's a difference between knowing the intricacies of a story and knowing a basic outline of what happens within that story. It's like saying that all FPS games out there share the same basic story because they're all about shooting soldiers/aliens/zombies/mutants to try and defeat the bad guy/save the world/win the war.... It does have a basis in fact but it does all of those games a deliberate disservice to suggest such a thing.
Anyway, as of right now we know precisely nothing either way, whether it will be the same or not. So as I've already said, it's disingenuous to assume...
