I think a "die once = race over" mode could be really fun (of course not for casuals).
In that mode they could let cars that fall off a cliff actually explode into thousends of pieces on the ground and it'd be cool if those that wreck their car on the circuit could run around and move some smaller stones or barrels to block short cuts ;) and drivers still racing could earn extra points by killing those car less players and stuff.
And online enabled splitscreen should be in it - there just aren't (can't be) enough games that do that.
