VIII does start kinda slow and uninteresting, and the story is a little wishy-washy (some things don't make sense) but the Junction system is the reason I like it so much, with Junctions you either love it or hate it, the reason junctioning and GF's are amazing IMO is that grinding is much much MUCH quicker than in the other titles, you draw magic for fifteen minutes and you're done, compared to level grinding for hours and hours.
I also like the abilities your GF's can learn, you can learn them in any order and you want and you feel like you have more customization than in the other titles
