Well, it seems like Insomniac is just testing the waters a little bit. The EA deal isn't anything crazy like Bungie's 10-year deal with Activision. It's for a single new IP (which Insomniac will own) and one game.

If it's successful, then I can see them leaning more towards multiplatform titles in the future. If it's not so successful, I can see them leaning back towards PS3 exclusive titles in the futures. They still reportedly have a great relationship with Sony, and it's possible that being Playstation exclusive for so long has been a bonus for them (strong PS fanbase, publishing partnership with Sony, etc.).
