ahah omg are you serious? really?! The back of the PS3 version states that it runs in 720p.
Also I have friends who bought both versions because they have different friends on both systems and a lot are claiming that the PS3 version looks better. As far as I know the 360 version is sharper and the PS3 version is smoother so it's personal preference.
I have the PS3 version and it runs fine. I've never experienced any slowdowns and the lag online is nothing to cry about because to be honest, I haven't run into any except for the invisible glitch which got patched on BOTH systems.
