The only thing I ever heard of was an 'extended edition' of FFVIII with additional content (such as a mission where you play as Seipher with tag alongs Fujin and Rajin). I never heard of complete remakes. This article seems to be talking more about the extended content idea.
I believe the idea of making 'extended versions' of the game got morphed into the 'Final Fantasy VII' project that ended up being all those sequels and prequels of FFVII.
Frankly, I believe the only game that would really need a remake is FFVII. And only because its the only game who's graphics hurt the game overall and because it has so many plotholes. The other two games are quite playable to this day. Although FFVIII could use a better translation to fix its image. (whatever)
