Yes, why not...
The 5970 has both GPUs on a single PCB. Due to thermal dissipation problems, 5970s are clocked slower than single 5870s (I think they are usually clocked at 5850 speeds). Your 5870CF setup will perform better than a 5970, in general.
(A Sapphire Radeon HD 5870 CrossFire beats a Sapphire Radeon HD 5970 OC Edition by roughly 6%, but at a much higher price difference, at least in Europe).
