I'd definitely go for the 5870 if I were you, especially if you're thinking of going 2560x1600 or 3D. I know Radeons don't have 3D as yet but if they do support it it will likely cause a nice hit to your frame rate, as it does with Nvidia 3D atm. I personaaly wouldn't get a 5970 as I'm not too keen on multi GPU setups (done it a couple of times and it can be a bit hit and miss tbh, and waiting for driver support in new games sucks too). And besides, you could always add another 5870 down the line if you want anyway, once they become cheaper.
