Technically, you can still just disconnect from PSN and do the updates later.

Generally, I just hit "update" for anything on the console (no thought involved; it's a console) whether it be for firmware or game update. Not that I don't groan if I just want to play a game for a few minutes rather than let the updates download while I do something else (hint: it does not involve watching the timer bar).

The funniest complaints about this have been from those who insist they only had ten minutes to play online when they were hit by a dreaded required firmware update before being able to sign onto PSN to play.

And yes, I agree with Squilliam in believing SCE should schedule their firmware updates into pre-scheduled, quarterly releases or something a bit more predictable.

The excitement of "wow, what did they add to this firmware update!" didn't take long to degenerate into "wow, what the hell are they making me update for this time?"
