They will not require you to ever uninstall "otherOS" to play a normal PS3 game or regular blu ray movie. If they do, then youll be able to sue them and win. Obviously they dont want to get sued so its not going to happen. So no they arent taking "otherOS" unless they force you in upgrading to a firmware that remove "otherOS" to play a regular PS3 game. Between, if you want to play a PSmove game or 3D games then im sure youll have to remove "otherOS", but those extended free features wasnt part of your purchase, legally its all good.
