I am pretty confident that Conviction will end up on the PS3 at some point. Many of the 3rd party console exclusives the 360 had have ended up on it at some point. Conviction isn't a system defining game like Gears so I can't see Microsoft paying to much to keep it exclusive. Plus with the long development cycle of the game, Ubisoft needs to recoup the cost anyway they can.
