Unfortunately I'm really new to the genre, but RE4 springs to mind. Although Dead Space is a fantastic game as well. And I hope to god that Alan Wake jumps in there when it releases.
I would like to point out that I omitted RE5, because as many people have said it's not much for a survival horror game. Even though it was my personal 2009 GOTY. Condemned gets honorable mention here though, what a freakfest that was!
