Possible for Sony to add Trophy support to PS1 titles?

It can be done, but it's a fair amount of work. It wouldn't really be something Sony does (unless their publisher) and it would all depend on if the publisher just decided if it was worth the money to do.

I really don't see it becoming the norm.
