The general assumption is that games on the Xbox and PS3 use 1280x720 as the reference point for native resolution output, so anything below this tends to draw notice, particularly for bigger releases.

SC has been hyped as on of the top examples for graphics on the 360 yet to be released so it matters to many. It just makes the visuals a bit less impressive considering compromises were made (like sacrificing output resolution on Halo 3 in exchange for lighting effects).

But unless it's a blurry mess after being upscaled, from a practical standpoint it doesn't matter. You don't pay for games by the number of pixels per frame.
