But yeah he's kind of the ultimate optional boss in that sense. You're never forced to fight him, and even finding him isn't likely to happen unless you know where to go

Well, how quickly does he heal himself if left alone? Wouldn't leaving defeat the purpose if he does it quickly?

I think you have to leave the entire area where he is, instead of just the arena. He won't start healing if you just go outside and save.

Actually he starts healing even if you are on the Ridorana Cataracts, but only if you're on the same screen where you fight him and don't attack him, or he doesn't see you for 5 minutes. That happened to me when I backed down to the corridors of the colosseum to catch my breath in the first time I fought him. After a while, he started regenerating 500K HP per second >_> He regenerated 2.5M HP before I got to him, mainly because of the god-forsaken traps in the arena.
