I don't expect huge changes, Nintendo, and thus the computer game industry, runs on a tick-tock cycle. NES introduced such gaming as is found in Mario, Zelda, Metroid, SNES perfected 2d gaming, N64 introduced 3d, GC perfected it. Wii introduced motion controls, Wii2 will perfect it.
Graphics should look better, framerates of PS360 games have been appaling this generation - hopefully next gen consoles will run at twice the framerate of the PS3 and 360. (4x if they want to run in 3d of course)
Ninty's next console is confirmed to run in HD
PS4, 720 will have Natal+ and move+ as default controllers
Wii2 will have much more flash memory
All consoles will use 802.11 n wireless
Wii controller will be Wiimote with built in WM+, and a nunchuk with equal motion controlling to the Wiimote.
PS4 will use either a Blu ray drive with a faster read speed, or a new disk drive
720 will use a disk drive based on HD-dvd technology
Wii2 will use proprietary technology (shock) with storage capabilities at least triple the Wii's (30 gb) and with read speed bumped up by the same factor
