In short
360 version confirmed to be 576p, ps3 720p
Disc swapping is minimal and doesn't affect the game at all
The FMV videos are not as nice as they could have been in quality
360 version has a higher framerate on average (or drops frames less)
Interestingly enough, despite this, some times the 360 version can look better
