Dude, the God of War III E3 demo is an old build. which just shows you our gruesome the actual game is going to be like. But the final build has many improvements from the E3 demo like: anti-aliasing on the CPU, motion-blur, object and inner object, lens flare, reflection and refraction, improved character lighting, improved texture streaming, and dynamic shadows. Ken Feldman, Santa Monica's Art directior, has even stated that the demo was problematic and had blurry textures due to streaming and not texture authoring- that has been fixed as well.
