That would save them maybe $5 total. Wi-fi being removed would require a redesign of the motherboard and a new manufacturing line to manufacture it. The cost difference between a 40gig HDD and a 120gig is virtually non-existent because most manufacturers have ceased production of HDDs that small. The external powerbrick may actually cost MORE to make because of the additional tooling and plastic required to make it.
Face it, there's really no way to strip anything out of the PS3 any more. They already removed the PS2 hardware, the card slots, and Linux support (which probably cost them almost nothing anyway).
