I tend to upgrade my weapon a bit more since i'm good with dodging, if you're using the lance. Gaurd guard gaurd. If you're using great sword dodge and gaurd smartly. You'll get the hang of what to so and when.
Also when running the opposite direction of a boss right when they're about to hit you jump. You do an "Epic Leap" which makes you invicible for about a second.
