2D to 3D is graphical changes (as well as CGI), and considering most of FFVII was still 2D movement, it really didn't effect gameplay. Materia is basically a smarter Esper system, not that big of a change when you consider the systems in the games before VI and VII. The experience in FFVI is VERY different then FFVII, but the major evolution in gameplay was FFVIII.
