I thought both variants were accepted in English. "The Demon's Souls" - one demon who has several souls, isn't that correct?

Actually the title makes a lot of sense if you take in the context of the entire game. It's not meant as the souls of the demons per se, but as you, the collector of demon's souls, or to the old one, the creator of the demon's souls.
