I like all those additions and I really wanna try Demon's Souls but isn't the AI in Demon's Souls on the weakish side? All the bosses I've seen on YouTube seem very predictable in their moves, and almost unaware of where the player is.

Actually the bosses A.I is top notch, especially the Man-Eater, False King Allant, Garl Vinland and Penetrator

But as any video game, A.I can be tricked and baited by exploits, and Demon's Souls has quite a lot of them.

Oh, and the Black Phantom's NPCs A.I are amongst the most fierce i've ever seen in a videogame. 

Well, I'm not familiar with those names, but Ive seen the tower knight, he was dumb as hell and the spider who spit flames was even dumber. Those flying mantas seemed a bit smarter and actually targeted the player to some extent.

The three I mentioned, are any of them in your list up there in green?

Tower Knight isn't dumb, he has too many blind spots, but you have to get to them first. Any newcomer in Demon's Souls dies over 4 times in average before even discovering his first blind spot.

The Armoured Spider isn't also dumb, she doesn't move from the spot because she's a fixed position boss. Most players just snipe at her from afar, but trying to go melee on her is actually extremely scary and she can destroy you easily.

Flying mantas are doom, especially on NG+. Actually, I once lost 5M souls due to a stray manta sniping me from afar, before I could even see her, OHKO'd me. But they aren't bosses, they are normal enemies. The boss you must be referring is Stormruler, which a fairly linear and easy boss.
