Crysis will probably lead to various multi-platform sacrifices, but I think the core engine will do fine on the PS3 (it's a pretty well designed game engine and the Crytek team is technically very talented).
Running '1080p @ 120 FPS' vs '720p @ 720p @ 60 FPS' or rock solid 30 FPS is not a real game changer. Real game changers are for example more complex gaming worlds, more onscreen activity, better AI, better physics, special effects and such.
The PS3 can do such things better technically, but considering this is a multi-platform title I think it's unlikely we will see much or anything to this extend. The same with regard to Blu-Ray capacity, I don't think they will add (much) better gaming assets or include improved 7.1 surround audio, etc.
So I think the 360 and PS3 version of Crysis will be about the same, but quite good technically compared to most multi-platform titles.
