I can't say whether the game will bore you or not, but the way you described the game could be used to describe almost any game type FPSs' - you move, shoot, move, shoot. Music games - you play a song, then another, then another. Etc.
I haven't played Monster Hunter myself yet, but obviously every monster bahaves very differently, and (as I understood it) when you kill a monster, you get to upgrade/change your weapon using monster body parts or something like that. Plus you can hunt together with other people, something that sounds really great to me (but may not interest you).
Plus- it's supposed to be quite hard, so there's the satisfaction of overcoming difficulty.
