My default choice would have to say Mitsuda for ultimate enjoyment of his music, but Uematsu has produced far more music. Koichi Sugiyama should be considered, it's sad that his work is overlooked the way it is, the Dragon Quest Symphonic Suites are amazing, I still prefer Mitsuda myself though.
