Electronic scales and strain gauges existed for many decades before Wii Fit. It doesn't really matter if the technology is new. How it's applied can be innovate no matter how old the underlying technology is.
The vitality sensor component could be under a couple dollars, maybe even a few cents. It's probably just a led light with a light sensor. I don't see how that could possibly add up to hundreds of dollars.
Anyone can guess. It takes no effort to throw out lots of predictions and have some of them be correct. You are not and wiser or better for having your guesses be right. Even a blind man can hit the bullseye.
