i don't think it will. it's santa monica's first ps3 game whereas uncharted 2 was ND's second attempt.
I'm also pretty sure that I read that the graphics in the demo were 'final', i.e., that they were happy with them, and didn't really want to improve them any further. That may have changed since then though (think I read the article 5+ months ago).
