It's because the PS3 and the 360 are so similar in power that it's practically like developing for one console, and getting the consumer base of two different consoles. The Wii, on the other hand, would take entirely different development strategies and teams, and a good amount of extra work (and it would likely be a completely different game). This is fine for licensed titles (Madden, movie based games, etc.), but for games like the ones you mentioned, many developers are only comfortable working with either the power of the HD consoles or the power of the Wii, not both.
