Every boss has a cheap 100% guaranteed way to not die, like sneak+poison cloud on flame lurker or shooting arrows from afar on old king allant or hiding behind the altar for the old hero. They are all super easy once you find the sure strategy. The only exception I found is the old monk and manaeater. But since the old monk is a player most of the time, then my vote also goes to manaeater. I usually manage to get him stuck in the middle flame, but twice he managed to get out and made me sweat lol.
