Partly because I can personally control the car better that way, because I find it more entertaining to see what the car is doing in real time as opposed to watching the replay of what I've just done, and in some ways it's more like real life because it affords a closer approximation of the peripheral vision you get IRL (not to mention head turning).

You can actually change between 3 views using the "select" button if you didn't already know :)
