Well, that's probably true, but it was also not the first time it was attempted on a homemade console, as Final Fantasy Origins and Final Fantasy Anthology comes to mind.

Granted, for HD consoles the games would need an extreme makeover to make them work, not just upgraded sprites and animations like they had in those PS1 conversions, but I think that the game producers can do those improvements and still mantain the same overall feeling of the original game.

It all comes down to what potentially the producers are willing to do, but reality shows us that it is almost far-fetched to think of any remake of a PS1 game to the current HD consoles.
