First and foremost, the best PS1 remake that could ever be remade in HD glory, in my opinion, is Parasite Eve.
That game, with modern age graphics and it's story can blow away anything that the JRPG genre has given us so far xD
On a side-note, Vagrant Story and the Original Grandia could also be two possibilities ;)
