Really to me I haven't seen a game that can match the God of War games opening levels and if you pass the Hydra in GOW1 and the Colossus in GOW2 and you still not getting into it then the series is probably not for you.
If you want to start however I'd say start with the first game then the second (I haven't played the PSP one and I can only imagine that the controls are bad with out a dualshock)
