One of them is the new FPS by the guy that did Bioshock aint it? As he didn't work on Bioshock 2 to make another new IP.
Other definites as far as I've heard are:
UFC Undisputed 2010
Dead Space 2
New MoH
New Star Wars
The rest of your guesses seem pretty sensible, but we'll have to wait and see I guess. I wouldn't write off Rock Band 3 as well as another Guitar Hero.
Apparently Geoff Guerstman (Lol spelling) has said there'll be more then 11 new games shown now... I dunno how it keeps increasing, unless to get over 11 the 'new' ones are ones we know about without media (i.e. Agent, Prince of Persia, Fallout New Vegas).
