Many graphical assets are already done, and those that aren't won't take long to upgrade to HD standards.

Err... I'd say the opposite. Making them for HD would be almost like making them from scratch. The opposite process should be easier of course.

for Natal, I'd love to see the "controller" being your hand in the good old gun-form we all know from our childhoods.

I don't think Natal can do that... at least they haven't shown anything like that.
