They need to set the quality bar for all other iPhone games, like Nintendo did for their consoles with Mario (and to a lesser extent, Microsoft with Halo and Sony with promoting the third-party GTA and FF).

They also need to make the most use of the hardware to show what can be done, like SM64 used the analog stick or Wii Sports used the Wii Remote (I'm sure there are Sony/MS examples too).

And they need a flagship game to drive hardware sales, if they intend to be a real console rather than a phone that plays games.
