Universities look at them to gauge whether or not someone is a good candidate for admission. Typically, people who do well in math and English get high scores. GPA is a much more important factor colleges take into account when viewing transcripts though. They'll look at SAT scores, but they won't prevent a person from getting into a prestigious university if they have a high academic GPA.
For example, I got a 1670 (fairly average) on my SAT, 1500 on my SAT II (exactly average), but graduated with a 4.40 GPA. The GPA alone was enough to be admitted into a University of California, so what I gather is that SAT scores don't impact admission nearly as much as schools want you to believe.
