I have both versions and I cant tell the difference playing through the campaign on either.
MP experience is that 360 matchmaking forces me to connect to a US host much more often while on PS3 Im much more likely to get a nearer host resulting in a better ping. However on PS3 the MP does occasional have mini lag spikes probably due to the wifi connection.
