im also disapointed that you haven't ever tried MGS still because it doesn't look enough japanese for you even thought it is.

honestly what catchs my interest is the following...

• The game has to be Near or 100% Fantasy based, i luvs me mah fantasy games.
• The Action has to be solid, over-the-top attacks with style, after games like Dissidia and the like i expect no less.
• The Art-Style, has to be cool. not quite realistic but close to it except well... its hard to explain actaully... but Tekken 6 passes while MGS, Rachet and Uncharted do not.
• Finally Character Creation or Character Cuztimation, nearly all of my PS3 and PSP games have some sense of your own little style to be added to the game, i hear MGS4 has online and you can make your own characters and stuff but i heard it also sub-par.

Im sure theres more but im far to lazy.  :/
