none of those games are native 1080p. there was a firmware update a little less than a year ago that allows the 360 to upscale to 1080p, but very, very few games are native 1080p. virtua tennis, pirates of the carribean 3, nba street: homecourt are the only native 1080p games out for the 360.
To the OP. You absolutely want to use component cables with the 360 with composite you are only going to get a 480i resolution on your tv. you would be just as good playing on a sdtv with composite cables. if you have an hdmi port on your 360 I strongly reccomend using HDMI over component too, but since you didn't mention it, I assume you have an older 360. with the wii, the max. output is 480p I believe. component or composite shouldn't look too much different on an lcd with a decent interlacing system, which your sharp does.
