Hm. Well, I definitely have a preference for third person action games, particularly those with strong adventure elements. The Zelda series and Okami are really tough to beat. I like games that involve decent third person combat, a sense of exploration, and some decently challenging puzzles nicely incorporated into the overworld. A nice story to get me through the game is a plus as well, and can make a more scripted, linear experience (Uncharted 2, MGS4) equally as enjoyable as a more open ended adventure (Zelda, Okami, Demon's Souls, and looking back to past generations, Shadow of the Colossus, more Zelda - hell, even Mario titles would fit in here, despite being predominantly platformers).
As such, I'm sure titles like the Last Guardian, God of War III, and the inevitable Zelda Wii will be topping my list soon.
Aside from third person action games, a fun multiplayer experience can really pull me in. LittleBigPlanet is arguably the best multiplayer experience this gen, with its easy drop-in/drop-out multiplayer, and a wealth of nigh infinite content to mess around in with your friends, and Mario Kart is up there for me as well. Super Smash Bros., while not being quite as addictive as its predecessor, is still great fun, and I probably would've forgotten Killzone 2 shortly after it came out had I not gotten hooked on the objective-based multiplayer (I have a thing for games like that and Battlefield lol). Similarly, New Super Mario Bros. will probably be the next big thing on the multipalyer front, though I wish it had online multiplayer like the others I've mentioned.

17. Demon's Souls (not sure how long this one will stay this high, but I have beaten the game three times already, a feat only matched by OoT!)

...and I'm stopping here. I've hit a paradox. In the end I think I enjoyed Uncharted 2 more than MGS4, yet it I can't imagine placing Uncharted 2 higher than most of those titles, but I have no qualms about placing MGS4 in my top ten along with the other MGSes. [Edit 2: Ah! Same applies to Demon's Souls!] Not to mention the order near the end there was getting pretty grey anyhow.

But yeah, given what I've said, and given both lists I've made, I think it's clear what my general tastes are.
