IMO Uncharted 2: Among Thieves (and part 1), Killzone 2 and Metal Gear Solid 4.
Keep an eye out for God of War 3 / God of War Collection (if you haven't gotten to play the first 2 games or you loved them on the PS2).
If you like arcade racers get Motorstorm 2: Pacific Rift and maybe WipeOut HD. From the PSN store check out Super Stardust HD, Warhawk and Fat Princess.
If you want family fun, check out Buzz!, Singstar and LittleBigPlanet.
Maybe Demon's Soul (RPG), White Knight Story, Last Guardian, etc as well.
