To be honest I'd like to see a proper fighting game, with weapons AND melee, where you can dismember opponents and amputate/decapitate them, you know, you'd basically have the potential to win a fight in one move if your opponent isn't very skilled, but fights could also last ages if you both have shields...
It'd have to use a wide variety of armours and weapons, and if you get a limb cut off, you can still carry on fighting but would be at a disadvantage, and if you get, for example, a leg cut off, you'd use the SIXAXIS to keep your balance while moving and attacking, so you could even fall over and be open to attacks, or cut their feet off and they walk around on stumps...
It could even use PROPER fatalities like the old MK games. Imagine Kratos ripping someones intestines out and choking them to death with 'em...
Yeah, it'd be the goriest game ever made, probably get banned in 80% of the worlds countries, but damn it'd be fun to play.
