As far as I see it

GC controller >> Dualshock 3
Wiimotion plus > PSwand
Wii motion plus + nunchuk >> PSwand + holding a dual shock 3 in one hand
Ubisoft's camera = PSEye

Personal preference I spose

To dissect the points 1 by 1.

GC controller vs. DS3: Your preference.  The GC controller has arguably less functionality (PS3 has 1 extra button + wireless + tilt control vs. the GC click on the shoulder buttons).  So technically, you could not design a game that could be played with the GC controller that is impossible to play on DS3.  The inverse is also true.

Wiimotion plus vs. PS wand.  This is an annoyance for both systems, as you need two peripherals in each case. (Wiimote + motion plus, eye toy + wand).  From what we are seeing, they have similar capabilities, although the wand does not have a D pad.  From the point of view of exclusive content, however, I don't see any Wiimote only games that could not possibly be handled by the Wand due to the additional buttons.

Wiimotion and nunchuck definitely has functionality that the wand would have trouble matching.  I allowed for this in my initial argument.  Please keep in mind that for a second player however, this is 3 peripherals to purchase (Wiimote +nunchuck + Wiimotion plus) vs. 1 PS wand (since you would already have the eye toy for the 1st player).  To add further speculation, the wand will likely have a USB port similar to the DS3 to allow for charging, which would presumably open the door for added peripherals (although I hope not, this is what I hate most about Wii, too many controllers to buy).

The eye toy is too me the biggest advantage for Sony.  It will allow for controller free play, or in combination with the wand, is one step ahead of the Wii and Wii motion plus since you can scan yourself into the game.  Ubisoft's camera is up until now a 3rd party peripheral, of which there is no precedent in gaming history of widespread support.  The guitar hero guitar (most successful 3rd party controller ever) may work in Rock band, but that is about it.
