To be precise they are talking about the storytelling, not the plot. There's a great difference, as you can have pretty mundane plots told in mold-breaking ways (Half-life 1) and interesting plots that fall flat in their unraveling (MGS, though it goes so far into cheesy that it comes out great from the other side).

I'm not reading it to avoid spoilers, but from Uncharted I expect a tongue-in-cheek "Doc Savage" plot with great cynematic setups and pacing, witty dialogues and great acting. It might very well be the most perfectly cinematic storytelling the writer ever witnessed, however good the plot is.
